The birth story of doubles is a compelling tale of perseverance and eventual triumph, making it an intriguing and worthwhile read in and of itself. Emamool Deen and Rasulan Ali were living in abject poverty in South Trinidad in 1936. With no idea where their next meal would come from, they had to sell the sole goat in the family. Rasulan prepared curry using the kabuli chana they had purchased with the few funds they had. The dish was prepared with traditional Indian spices, such as jeera and turmeric. Fried flat bread made with wheat, known as bara, began to accompany the curry on the menu. This one-of-a-kind meal quickly became famous when Emamool began selling them on his bicycle. It has now achieved the status of Trinidad & Tobago's national snack!

The Shia Muslim minority of Trinidad and Tobago has colorful Muharram celebrations, which were introduced to the country by Indian indentured immigrants who came to work the sugar cane estates from 1845 to 1917.
The celebrations honor Hussein's (the grandson of Muhammad) sacrifice as well as his brother Hassan's (who was also killed) death. After ten days, the last three evenings (Flag Night, Small Hosay, and Big Hosay) are the most exciting, culminating in a colorful parade on the last day. After making their way down the street in the last day's parade, the exquisitely crafted crescent moons and tadjahs are partially tossed into the water.
